Click and collect
Click and collect means ordering and paying online and then collecting in person. It is the highest-margin order a shop can take: no delivery cost, no phone call, and on the marketplaces it sits in the cheapest commission band. Uber Eats publishes 13% excluding VAT for pickup against 30% for its own delivery, which is the clearest published illustration of the difference.
In practice
Click and collect removes the delivery cost entirely and removes the phone call as well. The customer chooses, pays and arrives; nobody takes an order over a noisy counter and nobody drives anywhere. On the apps it is also the cheapest commission band — Uber Eats lists 13% plus VAT for collection against 30% plus VAT for their delivery.
The things that make it work are unglamorous: an order number the customer can see, an honest ready time, and somewhere to stand that is not in the middle of the queue. Shops that get collection wrong usually get it wrong at the handover, not at the checkout.
For many takeaways it is the easiest first step away from the aggregators, because a regular who already drives to you has no habit to break beyond where they tap.
